fall is here, which means warm & cozy recipes like this 7 vegetable soup that’s honestly one of my favorites 🫶 it’s also a feel-good recipe that I’ve been enjoying since I’ve been on this journey post endo & ovarian cyst removal surgery! find the recipe below, enjoy xx Creamy Vegetable Soup Serves 4 Ingredients 6 roma tomatoes, halved 4 carrots, peeled and halved 1 red pepper, cut into quarters 1 white onion, halved 2 garlic bulbs 1 yellow zucchini, sliced 1 green zucchini, sliced 2 tbsp olive oil Salt & pepper 2 tsp dried basil 1 tsp Italian seasonings 1 tsp dried oregano 2 1/2 cups boiling water 1 cup milk or coconut milk handful fresh Basil Directions 1. Preheat oven to 425F degrees. Line baking sheet with parchment paper and set aside. 2. Prep and wash all veggies. Add to a lined baking sheet. Add garlic to tin foil, season and wrap and place on lined baking sheet. Add olive oil and seasonings over top of the veggies and toss together until veggies are evenly coated. Add veggies to oven to cook- cook for 40-45 minutes. Check on veggies half way. 3. Once veggies are cooked, add all veggies to a food processor or blender. Squeeze in roasted garlic once cooled. Add in salt & pepper, and boiling water. Blend until smooth. Add in milk and blend. If you want your soup thinner- add more water as needed. 5. Add soup to bowls and add milk, black pepper and fresh basil on top. If your soup needs to be at a warmer temperature - add to a large pot and bring to a boil. How to make a sourdough starter from scratch. Comment the word “sourdough” for a free recipe! This is a very simple process, just follow along exactly as it’s laid out in this video. Couple tips, always keep your starter warm NOT HOT. I keep mine on the counter at home around 70 degrees. Use Luke warm water either from the sink or filtered. Any all purpose flour will work as long as it is unbleached and unbromated. I use @kingarthurbaking all purpose flour. Day 1: Mix 25 g water and 25 g flour together. Cover with paper towel and let sit for 24 hours. Day 2: To the same jar, add 50 g flour and 50 g water. This is a 1:1:1 ratio. Mix, cover and let sit for 24 hours. Day 3: To the same jar, add 150g flour 150g water. This is a 1:1:1 ratio. Mix, cover and let sit for 24 hours. Day 4: From now on you will discard everyday. To a NEW clean jar add 50 g starter, 100 g flour, 100g water. This is a 1:2:2 ratio. Mix, cover and let sit for 24 hours. Day 5 and onwards: Repeat the step for day 4. This can be scaled up to make as much starter as you need, for example 200g starter, 400g flour, 400g water. After about 12-14 days your starter will be mature enough to make bread!
