4 cheese Mac & cheese is the ultimate thanksgiving and holiday dish! this Mac & cheese is always a fan favorite whenever we have family and friends over. Find the recipe below, enjoy xx 4 Cheese Mac & Cheese Ingredients Serves 6-8 2 boxes of elbow macaroni 2 sticks of unsalted butter 4 cups whole milk 1 cup flour 1 1/2 tsp nutmeg, grated 2 cups cheddar cheese, divided 2 cups aged cheddar, divided 2 cups gouda, divided 2 cups parmesan cheese, divided 1/2 cup breadcrumbs salt & pepper Directions 1. Spray a large Pyrex dish with cooking spray. Grate all 3 cheeses and add to a large bowl. Mix until combined. 2. Melt butter in a large saucepan over low-med heat. Once melted, slowly add in flour to make a roux. Once the mixture is thick, slowly whisk in milk (2 cups at a time). Mix until combined. Continuously stir until the liquid has thickened. Once the sauce is thick, remove from heat. Add half of the cheese mixture and mix until combined. Add in salt, pepper and nutmeg. Mix. 3. Meanwhile, bring a large pot of salted water to boil and cook macaroni according to box instructions. 4. Once the macaroni is cooked, remove the pasta water and add the cheese mixture to the cooked pasta. Mixed until all pasta is evenly coated. 5. Add macaroni to the large Pyrex baking dish. Top with the remaining shredded cheese and bread crumbs. Add to oven on broil for 5-6 minutes, until cheese on top has melted and bread crumbs are lightly browned. 6. Plus it’s so flavorful and you can add in lots of veggies! find the recipe below, enjoy xx Tortellini Soup Serves 4 Ingredients 1 package pre-cooked cheese tortellini 4 cups black kale, cut into pieces 1 garlic clove, minced 1 white onion, diced 1 tsp chili flakes 1/4 cup tomato paste 1 jar crushed tomatoes 1 tbsp olive oil 2 cups cooking cream 946 ml veggie broth 1 cup Parmesan cheese, grated 2 tbsp parsley, chopped Salt & pepper 1 Parmesan rind Directions 1. Add olive oil to a medium pot over med - high heat and add in onions and garlic. Season with salt, pepper and chili flakes. Cook until onions are soft. 2. Add in tomato sauce, veggie broth, salt, pepper and Parmesan rind. Cover and let simmer for 10-12 minutes. Add in tomato pasta, mix together and let sit for another 10 minutes. 3. Once soup has come to a boil, add in tortellini, black kale and cream. Mix together until combined. Cover and let cook for 6-8 minutes. Grate in Parmesan cheese and season as necessary. 4. Once tortellinis are cooked, add soup to bowls. Garnish with Parmesan, black pepper, chili flakes and parsley. Becoming a mom has been one of the most transformative experiences of my life. There are countless shades of pink, each unique and beautiful in its own way. While I may never reclaim the “pink” I once knew, I’ve come to realize that I will never return to the person I was before my journey into motherhood—and that’s perfectly okay. I am learning to embrace this new version of myself, as a mom. The first few months of postpartum were some of the most challenging moments of my life. Battling PPA has been a relentless struggle, but through it all, I have been profoundly lucky to have the unwavering support of my husband, family, and friends. It really does take a village. Though the shade of pink I once wore may be gone, I am beginning to find confidence and beauty in the new “pink” I embody.
