This kimbap has become my go-to for when I need something filling, high-protein, and quick! ⭐️ Sparky’s quick & easy high protein, low carb meal: Cabbage Egg Kimbap (makes 3 kimbap rolls) 🍙 3 Seaweed Sheets 🍳 Cabbage Egg Omelette: 1/4 of a cabbage thinly sliced, 6 eggs, 1 small carrot thinly sliced, 1/2 tsp salt (cook 1/3 of the batter at a time to make 3 omelets) 🥬 Veggies of Choice - I did lettuce, cucumber, & avocado Optional: brush of sesame oil on top + sprinkle of sesame seeds (I love eating it with kimchi on side!) Finally found PCOS-friendly snacks that work for me! The 2nd one is my favorite right now🫶😭 It’s not about getting rid of snacks completely, but finding snacks that work for your body. Balance is key❤️ spicy tuna dip - can of tuna - some sriracha - some mayo (I love @Chosen Foods it uses high-quality avocado oil instead of seed oils) - salt to taste (I only use redmonds real salt) “little savory treat” popcorn - popcorn - melted butter (I did 2 tbsp for half a bag of plain popcorn) - generous amount of furikake (I got mine from @Trader Joe's) - salt to taste my “sweet” (yet high protein) treat - goguma/yellow flesh sweet potatoes (they have them at @Whole Foods Market) - cottage cheese (I use the lactose free one from @Good Culture and it’s my favorite) Disclaimer: this is my personal experience with managing PCOS & pre-diabetes, not medical advice.
