Preheating is KEY! Some foods may require longer, but for eggs I like to let my skillet heat up over medium-low heat for about 2-3 minutes. Then add your fat. Then add your egg. Yes, a quality pan does make a difference. Pre-heating your cast iron is ESSENTIAL! Medium/medium-low heat is usually plenty when cooking anything in cast iron. When it comes to making (any) eggs, I like medium-low heat. Certain foods may require longer, but when it comes to eggs, I like to let my skillet heat up for about 2-3 minutes (I don’t like burnt eggs). LET THE EGGS COOK before you start moving them around the pan. This video is NOT meant to show you how to make Michelin rated eggs- it’s to show you how to make scrambled eggs in cast iron WITHOUT STICKING! You like a different style of scrambled eggs? Go ahead and make them. You want more ingredients? Add them. In this video my scrambled eggs consisted of 4 eggs. Choosing the right size pan also helps- too big or too small can make it more difficult. For example, in this case I used the @YETI which has an 8” cooking surface.
